The Forgotten Art of Tuticorin Macaroons: From Portuguese Port to Madurai Stalls

"Unlike delicate Parisian almond macarons, Tuticorin macaroons are cone-shaped featherlight clouds born on the Coromandel coast, whipped with stone-ground coastal cashews and egg whites."

In the bustling coastal port of Thoothukudi (Tuticorin), Portuguese sailors brought their knowledge of European confectionery in the late 17th century. But local Tamil bakers adapted the recipe: almonds were scarce, so they turned to locally grown, sun-dried cashews from the red soil coastal groves.

The result was unique in all world confectionery: a crisp, snow-white peak that crackles delicately at the lightest bite and dissolves into pure cashew velvet on the palate.

At Madhuram & Co., our recipe remains unchanged since 1968. Every batch is slow-baked in wood-fired deck ovens before dawn, keeping the humidity low so each macaroon retains its legendary lightness for up to two weeks.
